Nagano Prefecture is Japan’s largest producer of soybeans, the main ingredient in miso paste. So naturally Nagano has many premium miso manufacturers, several of which have histories of over 100 years. Combing age-old techniques with modern technology, the manufacturers continue to refine Nagano’s home-grown miso heritage. The miso is allowed to slowly mature for two or three years in large wooden casks. Several of the makers offer tours of their facilities and provide tastings of miso soup, vegetables preserved in miso paste, and other miso products, some available for purchase. For people extra curious about the process, miso making lessons are also available. (Japanese only)
