Description

Besides wine and sake, Nagano is becoming a major producer of shochu, thanks to its high quality grain and water. In 2002, the prefecture began a system of registering shochu distilleries, and today there are 54 companies making 78 different products. The different types of shochu represent Nagano’s various agricultural products. Besides rice, “imo” potato, buckwheat, and wheat, other shochu types are made from tomato, enoki mushroom, chestnut, potato, squash, “nagaimo” yams and nozawana. There are many interesting types but several very good standard shochu products as well.
