Slowly boiled in light soy sauce, sugar and sake, “tsukudani” locusts have historically been an important source of protein in land-locked Nagano, especially in areas far from the main transportation routes. Besides locusts, bee larvae are also a traditional delicacy. Recently, insect cuisine has been thought of as contributing to long life and is gaining in popularity as a delicacy. It is available in souvenir shops throughout the prefecture.
